Between gumbo, jambalaya, boudin, and po' boys it's hard to choose just one Louisiana food innovation, but thinks they have it down.

Hot sauce, duh! The website validates their choice by saying "the Louisiana tradition of mixing tabasco or cayenne chili peppers with vinegar and salt and putting it on pretty much anything is a national treasure...". That's right, a national freaking treasure!
