You ever sit there at a Crawfish boil, hands dirty, sweat on your forehead, and think… “am I even doing this right?”

Because I ain’t gonna lie… I’ve been Cajun for 43 years. I thought I had this whole crawfish thing figured out a long time ago. Like locked in. No questions asked. But then… I get on TikTok.

And now I’m watching people eat crawfish like it’s some kind of science experiment. Twisting this way, pinching that way, doing stuff I ain’t never seen in my life. Got me second guessing everything I know.

How do you eat Crawfish?

Grab the tail in one hand, head in the other. Twist and pull. Clean break. That’s step one every time. You want that good solid twist so it separates right.

Now what you do next… that’s where people split up real quick.

Some folks toss the head without even thinking, thats the boat im in. Others go all in. They squeeze that head just a little and go for it. That juice, that seasoning… that’s where all the flavor sits. It’s rich, kinda buttery, and yeah… maybe not for everybody, but if you know, you know.

After that, you look at the tail. You’ll see those little shell rings. Peel a couple of those back, not all of ‘em, just enough to get to the meat. Kinda like peeling an egg if you think about it.

Then comes the easy part. Bite down on the end, pinch the tail, and pull. That meat should slide right out. If you gotta fight it… something ain’t right.

And yeah, don’t forget about the claws. Might not be a lot in there, but hey, every little bit counts when you’re sitting there going pile after pile.

Now here’s where it gets funny…

And I’m sitting there thinking… man, that sounds a whole lot like what we’ve been doing down here forever. So maybe I ain’t been doing it wrong after all. Or maybe there ain’t really a wrong way to begin with. Because here’s the truth… If you’re full, your hands are stained red, and there’s a big ol’ pile of shells in front of you…
